The morning of the first trade fair day at veganfach is once again traditionally reserved for our international trade visitors from commerce, food service and industry. The out-of-home media team of dfv media group (gv-praxis, food-service, Foodservice Europe & Middle East) is again in charge of the top-class conference programme of Pro Forum Vegan. In addition to speakers from the vegan out-of-home market, trade professionals will pass on their know-how to trade visitors. Under the title "From vegan to plant-based: plant-based concepts for food service and commerce", acknowledged experts will discuss the challenges facing the trade and the out-of-home market due to the increasing demand for vegan products at veganfach 2018 on Friday, 2 November 2018 as of 11:00 a.m..

Things get started on Friday with the demo chef, peace activist and author Wam Kat, with his lecture entitled "Vegan-vegetarian catering? A question of attitude! Wam Kat is an icon of sustainable, meat-free catering at events and major demonstrations. He once cooked on the legendary Greenpeace ship "Rainbow Warrior", where, according to his own statements, he discovered his love of cooking. He was a co-founder of the Dutch rolling, vegetarian catering kitchen "Rampenplan", which has been feeding political activists for over 30 years at events throughout Europe. His plea: "Food is politics. Every one of us can contribute to a sustainable world on a daily basis through conscious choice."

Following this, Horst M. Karufke, managing director of Innogy Gastronomie, based in Essen, will present the traffic light system of Innogy-Gastronomie and answer the question: "50 percent vegan meals in the company restaurant – is that possible?“ As the managing director of Innogy Gastronomie, with its 400 employees, Karufke is responsible for the catering offering at 52 locations throughout Germany, with an annual turnover of 36 million Euro. For over a year now, the chef and sales specialist has been successfully advancing the cause of vegan-vegetarian dishes in the offering, also as a component of company health management. Gordon Faehnrich from the bakery chain BackWerk in Essen then shows how a vegan expansion of the assortment can be realised. The title of his speech is "The vegan snack offensive – urban and excellent. Successful expansion of the assortment with trendy baked snacks – completely animal-free".
 


Lucien Coy, member of the board of the support association Veggie-Kids from Frankfurt/Main, then presents the concept of the first vegan kindergarten in Germany. Mokita, as it is called, attraced a lot of media attention in August. "We want to be as consistent as possible and as pragmatic as necessary", is how speaker Lucien Coy describes the philosophy of the kindergarten. The 39 year-old has lived vegan with his family for ethical reasons since 2011 and has, together with other parents, initiated the first completely animal-free daycare facility for children in Germany.

How good is the vegan and vegetarian offering in Germany's supermarkets actually? The Berlin Albert Schweitzer Stiftung für unsere Mitwelt has examined this question in detail and subjected the plant-based offerings of discount and full-range supermarkets to a test. The results are presented to trade visitors of veganfach 2018 by managing director and president of the foundation Mahi Klosterhalfen in his talk entitled "Supermarkets in the vegan check“. The check is viewed as the "vegan benchmark" in the industry. Klosterhalfen has actively dedicated himself to animal welfare since his student days. Following his graduation with a diploma in business management, he established the foundation as its first full-time employee. It now employs 40 people in two federal states.

Another practical example of a "vegan assortment as a formula for success" is then presented by Kai Scholand in a talk. Born in Bochum, he has been self-employed since 2001 and is the owner of the Rewe Scholand in Mülheim/Ruhr. He already began his training in retail trade sales at the age of 16. For a long time he had little in common with plant-based nutrition – until he received an impulse 6 years ago from out of his direct environment. In this context he became a vegan himself and gradually began to expand the vegan assortment in his store. His Rewe supermarket is today regarded as the pioneer in Germany with regard to vegan-vegetarian assortments, also due to the branding he composed himself for the vegan segment.

The closing talk of the Pro Forum will this year be held by Amelie Leipprand from the Deutsches Institut für Normung (German institute for standards) in Berlin. The 48 year-old has been a project manager there in the Innovations department since 2016. She pursues the question of whether we require a DIN standard for vegan products. The engineer believes so, and invites manufacturers and traders, as well as restaurant proprietors and head chefs to participate in an open dialogue about standards that could ensure greater transparency and quality on the market for vegan products. Her speech bears the title "Does the industry need a standard? If yes, how does that work?"

To conclude the Pro Forum Vegan, all participants are then invited to visit select exhibitors and try out the new products being presented directly.
